I am surprised that the authors are surprised that eating fruit helps diabetes but drinking fruit juice aggravates it. Robert Lustig 1 has described how fibre slows the absorption of fructose so that it can be absorbed. In the absence of fibre, that is to say, as fruit juice, the fructose overwhelms the metabolic pathways and is converted to fat. 2
